Abstract
The volatilomics approach to corned beef and pork is a method that can be used to provide an overview of volatile compound profiles and has high sensitivity and has been successfully used for halal authentication. The aim of this research is to authenticate the halalness of corned beef and pork using the Gas Chromatography–Mass Spectrometry method. The research method used was laboratory experimental study with volatilomic approach using GC-MS method combined with chemometrics. The research results showed that the number of volatile compounds in corned beef was 242 and in corned pork there were 15 volatile compounds. Through PCA analysis, it shows that the volatile compound profiles in corned beef and corned pork are different. Cluster analysis using Dendogram can classify information and identify patterns of volatile compound profiles in corned beef and corned pork that are well clustered. The results of the PLS-DA analysis show that there are several volatile compounds that play a significant role in differentiating between corned beef and corned pork. The compounds with the highest VIP (Variable Importance in Projection) values are Hexadecanoic acid and Pentadecanoic acid, which shows a dominant role in separating the groups of the two types of corned beef. A high VIP value (>1) indicates that the compound has a major contribution to the classification model. Based on the differences in typical volatile compound profiles, the results of this research can be used to selectively authenticate the halalness of corned beef and corned pork.
