Abstract
Halal authentication of processed meat products such as sausages is important protect Muslim consumers from non-halal ingredients, such as pork. This study aims to distinguish between beef and pork sausages based on volatile compound profiles using the Gas Chromatography-Mass Spectrometry (GC-MS)method combined with chemometric analysis. The research method used was laboratory experimental study with volatilomic approach using GC-MS method combined with chemometrics. The results showed the number of volatilomic compounds in beef sausage was 27 and in pork sausage was 25 volatilomic compounds. PCA analysis showed that the profiles of volatile compounds in beef and pork sausages were different. Cluster analysis using Dendogram can classify information and identify patterns of volatile compound profiles in well-clustered beef and pork sausages. The results of PLS-DA analysis showed that there were several volatile compounds that played a significant role in distinguishing between beef and pork sausages. The compounds with the highest VIP (Variable Importance in Projection) values were Hexadecanoic acid and Butyl adipate, indicating a dominant role in group separation of the two types of sausages. A high VIP value (>1) indicates that the compound has a major contribution to the classification model The conclusion of this study is that the differences in volatile compound profiles are distinctive and there are differences that can be used to selectively authenticate the halalness of beef and pork sausages.
